Who Are We?
My name is Eric Favier. I am a French native, having lived in the US for the last 40+ years. I have had 21 years as a French pastry chef, both as the chef and as the trainer for the Marriott Corporation. I then ran a very successful, 500 seat, French Bistro in Tallahassee, FL for 21 years.
At this point in my life, I want to share my experience and expertise with new and upcoming small restaurant owners.
After over 40 years in the food and beverage industry, I have the knowledge, expertise and persona to teach, motivate and inspire my clients to reach their dreams and full potential. My clients trust me to make their operation both fun and profitable.

Our Services
This is a FREE 30 minute phone consultation during which you would explain your type of restaurant, your current situation, your needs or pain points, and what you would like to improve.
We will listen and provide our professional opinion on your best course of action.
If, after our conversation, we find we are good fit for one another, you would then decide if you want to pursue more hands on help in Level II and Level III.
This is a FREE 30 minute phone consultation during which you would explain your type of restaurant, your current situation, your needs or pain points, and what you would like to improve.
We will listen and provide our professional opinion on your best course of action.
If, after the free consultation, you can see the value and benefit of more in depth discussion and solutions, we offer an extended phone call at $150 per hour. For this extended call, you will share 3 specific questions/needs/walls that you as the owner have. We will provide solutions based on your explained problem.
Secondly, to be able to really see the operation and your specific problem areas, we offer video consultations at $225 per hour. These video calls will make it easier to see the situation in action or in real time, allowing us to see the operation, employees, customers etc and observe the needs and issues. Often it may take more than one video call to be able to offer concrete solutions and help in the best way possible.

If, after the free consultation, you can see the value and benefit of more in depth discussion and solutions, we offer an extended phone call at $150 per hour.
To really understand the operation and your specific problem areas, we offer video consultations at $225 per hour. These video calls will make it easier to see the situation in action or in real time, allowing us to experience the operation, employees, customers etc and observe the needs and issues you have.
Level Three is the most intensive and most valuable service we offer. We combine level one and level two with a 2 ½ day in-person intensive to observe up close, train in all aspects of the restaurant as needed and provide a step-by-step comprehensive report detailing effective and efficient solutions, tools and action steps to make your big dream a reality.
First we schedule the initial call and 1-2 video calls to get an idea of your operation and needs.
First in-person day: I observe first hand your operation; speak with employees, managers, and especially the owner to understand the procedures, problems, what’s working and what isn’t.
Second in-person day: I provide a report of findings and solutions and discuss with the owner the best way to improve and take action. Then I will personally train the employees and/or managers and provide practical ways to improve operations.
Last ½ day: Final visit to ensure the owner understands and has a step by step plan to implement the solutions provided in the report.
Finally, we will schedule a 1 hour video call two weeks after the final visit to revisit the actions taken; determine if changes or tweaks are needed; and answer any final questions that may come up after the implementation.
Summary of Level Three Intensive:
2 ½ days of in-person training (6 hr @$250/hr =$1500/day x 2 ½) =: $3750
2 (1 hour) video calls ($225 × 2 ): $450
Follow up video call : $225
3 ‘what if’ phone calls, 30 min each: $225
